Since my wife went vegan back in 2018, our camping meals have been primarily plant-based.
But, not all vegan recipes made at home can translate to the outdoors. We’ve had to carefully plan and test different breakfast, lunch and dinner recipes to see which camping meals work and which one’s flop.
So, below is a list of our favourite camping meals that are both nutritious and flavourful, as well as completely plant-based.
Now, you too can enjoy easy, delicious, and 100% vegan camping meals!
1. Tofu Scramble Breakfast Burritos
Prep Time: 10 minutes • Cook Time: 25 minutes
Definitely one our favourite meals, tofu scramble breakfast burritos are a big reason we’re always excited to wake up while camping.
It’s full of flavour and provides us with the energy we need for a full day of exploration.
Onions, garlic, and bell peppers are stir-fried first. Then the tofu is cooked separately, adding in the right blend of spices to give it loads of flavour. Once the tofu is cooked, the veggies are added back and tossed in.
I usually lightly toast the wraps directly on the stove burner at low heat. Then fill each wrap with the tofu-veggie mix, diced tomatoes and spring onions, and smashed avocado. We also spoon over some salsa before wrapping them up into burritos and toasting them in the same fry pan.
This is one super delicious vegan breakfast meal that’ll have you energized for the whole day!
2. Fully Loaded Beans on Toast
Prep Time: 5 minutes • Cook Time: 10 minutes
My wife first introduced me to beans and toast for breakfast while we were dating. After some initial skepticism, it quickly turned into one of our go-to breakfast meals while camping.
Why? Because it’s so darn simple to make!
However, over the years we’ve refined its simplicity and added a few more ingredients to make it more dynamic and exciting for camping.
While a can of beans in tomato sauce is warming up in a pot with a little bit of oil, we finely dice onions, and thinly slice avocados.
We toast sliced bread on the burner and then add vegan butter to one side, add the sliced avocado and sprinkle on pepper and salt. The cooked beans are then spooned on top and then topped with the onions.
Not only is this vegan camping meal super simple and easy to make, it’s also very hearty!
3. Rocky Mountain Toast
Prep Time: 2 minutes • Cook Time: 2 minutes
Toast by itself is rather mundane and lack-lusters. But, with a few key ingredients, it can be taken to a whole other level, all while being completely vegan!
With a thin spread of hazelnut butter, layer of thinly sliced banana, sprinkle of hemp seed and drizzle of Canadian maple syrup (only the best!), toast has never tasted better.
So, if you wanted to emulate waffles for breakfast, this is how you can do it easily.
4. Plant-based Hot dogs with Corn
Prep Time: 5 minutes • Cook Time: 20 minutes
Campfire roasted (plant-based) hot dogs and corn-on-the-cob are incredibly delicious. The smoke from the fire really adds to the flavour.
Most grocers now carry vegan hot dogs. And, they can be skewered and cooked over a fire like normal hot dogs! Likewise, corn can also be roasted but take a bit longer to cook through.
I typically toast my hot dog buns on a lightly oiled pan. Then load on the standard condiments: Finely chopped onions, relish, mustard, ketchup. Sometimes I’ll add sliced avocado for healthier fat.
A little bit of vegan butter spread over the roasted corn and it is time to indulge!
5. Chickpea Salad Sandwiches
Prep Time: 30 minutes • Cook Time: 0 minutes
If you’re looking for a packable vegan meal perfect for camping and hiking, look no further!
This chickpea salad sandwich recipe can be pre-made, either at home or while camping. You just need to prep and mix all the ingredients together and store it in a re-sealable container.
And, when you’re ready, spoon the salad onto buns or sliced bread to enjoy a protein-packed meal.
6. Beyond Burgers and Garlic Green Beans
Prep Time: 10 minutes • Cook Time: 25 minutes
Burgers are a dinner-time favourite for many campers. But, they’re usually made from meats such as beef and chicken.
Thankfully, plant-based protein burgers are just as delicious and easy to make!
I like to pan-fry beyond meat burgers, pressing them down a bit to get that smashed burger feel, along with a sprinkle of salt and pepper.
After they’re cooked, I toast the burger buns on the same pan in the left over burger oil. Tomato slices, pickles, onion, vegan mayo, ketchup and mustard are my preferred toppings.
And, beyond burgers pair incredible well with pan-fried salted garlic green beans!
7. Lasagna Soup
Prep Time: 5 minutes • Cook Time: 25 minutes
One-pot lasagna soup is my wife’s go-to vegan meal at home. Maybe it’s because when we’re feeling lazy it’s the easiest meal to put together.
Thankfully, it’s the exact same recipe and steps while camping.
After a bowl of lasagna soup, especially on a cooler night, you’ll feel all warm and tingly. Mostly because you’ve had a wonderfully filling vegan meal while away from home.
